SB: If you want to make a fabulous turkey... Do the usual cleaning out ceremony with salt water. (and this part is a little gross) Get under the breast skin and rub a mixture of butter, salt, pepperand sage over the flesh. Then add 2/3 fresh bayleaves Brush turkey skin with vegetable oil Now... and don't get weirdrd out, this works beautifully, place the turkey inside a brown paper bag (NO, it will NOT burn). Put the bagged turkey upside down in the pan (the juices will flow directly to the breast instead of the bottom which no one ever eats and you don't have to baste). Bake (about 20/25 minutes per lb.) Discard bag, and voila... a really nice looking, great tasting bird.
